Avocado-Pesto Spaghetti

Re-invent Spaghetti Sauces, and why not with Avocado! our super fruit nowadays, i know most of us think that the Avocado is a veggie, but it is actually from botanical view a fruit, as the avocado tree counts to the family of bay bushes ;)
Ingredients:
Half of a package of Spaghetti (around 500 gr)
2 Avocados
2 TS of Sour Cream
Parmesan
1 big hand full of Parsley
olive oil
white wine vinegar
Basil
Pine nuts
cherry tomatoes
2 garlic cloves
Directions:
First of all, put on water to boil in a pot for the spaghettis.
For the Avocado Pesto:
After peeling both avocados, place them in a mixer. Add 2 TS of Sour Cream, one big hand full of parsley, around 2 TS of olive oil (can be more!) and 1 TS of white wine vinegar.
Rasp fresh parmesan Cheese in the mixer, add two garlic cloves and a hand full of pine nuts(optional! but it creates a nice nutty flavour to your pesto), as well as salt and pepper.
And you’re good to go! Mix everything until it becomes one mass.
Never forget to taste and try! That’s the only way to improve your dish, while cooking it!
By now, your water should be boiling, so add the spaghettis, let them boil around 8 minutes for Al Dente results. Now Mix the spaghettis with your amazing avocado-pesto.
What a color burst!!!
Ready to arrange a beautiful plate for your guests or family. On Top of your Spaghetti portion, add fresh Cherry Tomatoes and Basil Leafs as well as Pine nuts for decoration.
Finally, rasp a little bit of fresh parmesan Cheese on top of your plate.
I’m pretty sure, there will be some nice comments about this beautiful looking and tasty dish!

Optional: What also fits extremely well with this dish is to add a well cooked Salmon filet with rosemary. cook it until its a little crispy from the outside but still juicy from the inside and add a slice of lemon on top.
And instead of putting fresh cherry tomatoes you could grill them a little with garlic and olive oil in the pan.
