Cheesecake with Grapefruit Touch ( Pop-Patisserie )
I thought to make a classic cheesecake…
But this cheesecake is not like any other cheesecake as you can see. It’s topped with crispy Grapefruit Lavender Popcorn and more fruity inside. It’s a real eye catcher and a creamy comfort cake!
I love the combination of textures here, a great mix of creamy and crunchy!
Cake made by my little sister (she is far better than me in baking ;)
For a small cake form
6 little pieces
Ingredients:
Half of a pack of Leibniz Cookies
50 gr Butter
300 gr of cream cheese of your choice
100 gr of sour cream
75 gr of whip cream
100 gr of sugar
2-3 tbsp of lemon juice
2-3 tbsp of grapefruit juice
1 egg
1 tbsp of flour
A couple of drops of vanilla extract (or vanilla sugar)
Directions:
Crumble the biscuits and mix with the melted butter to a flat base in the baking tin.
Put them for 5-10 min in the oven on low heat. After let them cool down.
Mix your dough by hand or with a mixer and pour it carefully in the cake form. Put it for 45 min at 160-170 degrees in the oven. Little tip: put Aluminum foil on top so that the cake doesn’t brown to much, after let it cool down in the oven.
Decorate as you want it :) Enjoy chilled.
