Tricolor Summer-Quiche
This is a summer love story transitioning to the beauty of the autumn season.
The other day I went to one of our Berlin local markets and bought loads of fresh fruits and vegetables.
I bought a LOT of these beautiful colourful tomatoes and thought it’s about time again to make a quiche! There came the idea of combining goat cheese with tomatoes and a herbal touch of Mediterranean spices.
It turned out to be so delicious that we ate the entire quiche in two days!
I highly recommend to serve a piece of quiche with a fresh made salad on the side.
A match made in le french heaven!
Ingredients:
For the dough:
250 gr of flour
125 gr of butter
2 egg
Pinch of salt
For the filling:
250 g of tomatoes (tricolor)
150 g of goat cheese
100 g of grated gouda cheese
1-2 tsp of mustard
150 g of Crème Fraîche
1 egg
Thyme
Salt
Pepper
Spices of your choice (i used Mediterranean spices with Rosmarin, Oregano and Basil)
Instructions:
For the the dough, mix the flour, butter, salt and eggs together until a whole mass is created.
knead the dough until it has a uniform consistency, when formed as a ball, put in the fridge for 30min.
Preheat the oven on 160 degree (320 F).
Wash the tomatoes and cut them into halves.
For the cream filling, mix crème fraiche, grated cheese, mustard, egg, salt, pepper and spices in a bowl.
Take a brush and brush some vegetable oil over the quiche form.
Take the dough out and roll the dough on the work surface until approx. 5 mm thick , then gently put it on the quiche-form leaving enough dough until the upper border of the form.
Pour the creamy filling in the form make sure it’s well spread then sprinkle with some spices. cut the goat cheese into rounds and add half of the goat cheese on the filling.
Add your tomato halves starting from red as the outside circle then transition to orange in the middle and as the last circle yellow tomatoes. Add the other half of the goat cheese rounds on top.
Put everything in the oven for 35-40 minutes.
Serve with fresh thyme leafs and enjoy the Quiche :)
