Peach-Burrata summer salad

This year everything is a bit different for me in terms of vacation and work.
As I'm not sitting in the hot sand on a beach this summer, this amazing fruity salad is catapulting me to the south.
its flavors are underlining my thoughts and feelings.
The peaches we bought in a local supermarket are tasting like in the south of France and the cherry tomatoes are from our own garden where we grow vegetables, salad and herbs and also edible cornflowers this year (which i’m kind of proud of, haha!).
The salad is packed with loads of fibre and vitamins! the fibre is very healthy and good for your intestinal flora and supports your digestive system.
For 2 servings
Ingredients:
2 Peaches
1 Burrata
60 g of cherry tomatoes
40 g of blueberries
extra virgin olive oil
1-2 Tbsp of fresh pressed lemon juice
2 tbsp of Nut-mix (for ex: sunflower seeds. pumpkin seeds, sesames etc.)
Fresh herbes (Basil, Mint but you can also take other ones)
Optional: Edible flowers (cornflowers) and Lemon olive oil
Preparation:
wash the peaches, blueberries and tomatoes and then quarter the peached and spread them all over the plate.
Add the tomato halves and the blueberries.
pull apart the Burrata cheese and spread it on the plate.
roast the nuts for 1-2min until a nice roasted smells comes up then toss them over the salad.
cut your baguette into slices and grill them for a few minutes over medium heat.
squeeze half of a lemon and drizzle some lemon juice as well as olive oil on top of the salad.
season to taste with salt and pepper.
