Healthy Salmon Poké-Bowl
Embarking on a journey of health, let's kickstart the year with a Salmon Poké Bowl. This vibrant dish, rooted in Hawaii's tradition of "poké" (meaning "to slice"), has evolved into a global sensation.
Salmon takes the spotlight, offering omega-3 fatty acids for heart health and brain function. Avocado adds creaminess and nutrient richness with heart-healthy fats, vitamins K, E, and C. A colorful mix of fresh vegetables brings vitamins, minerals, and antioxidants, supporting immune function and adding a burst of freshness.

Ingredients:
grated red cabbage with carrots
cooked salmon
white rice
pepper
avocado
koriander
green onions
black sesame
blueberries
peanuts
chili
limes
For the dressing:
2 tbsp soya sauce
1 tbsp lime
1 tbsp sesamoil
2 tbsp maple syrup
1 tbsp peanut butter
1 tbsp camelina oil
Steps:
wash the rice thoroughly with cold water until the water runs clear. The ratio between rice and water is 1:2 (which means 1 cup of rice 2 cups of water). Cook the rice for about 10 min.
Meanwhile grill the fresh salmon in a pan with a bit of oil over medium heat. cook after packet instructions.
You can use fresh red cabbage and grate it together with a bit of carrot. Drizzle salt and a little sugar over it and massage it for about 30 seconds and then let it sit for 10 min. Add some white wine vinegar to it.
Wash and cut all your veggies. Let the salmon cool down a bit, then cut it into mouthfriendly pieces.
Mix all your ingredients together for the dressing. season to taste.
Assemble all your ingredients in the bowl. Drizzle blueberries over the bowl and the dressing.
Garnish with black sesame seeds, lime and green onions.
