Couscous Strawberry Spinach Salad
Let’s embrace the summer season with this amazing fresh Couscous Strawberry Spinach Salad With Feta and Walnuts!
I’m actually surprised myself that this is the first Salad on my Blog.. it’s more then time!
Because i’m actually a super big Fan of Salads and can eat them everyday! But there is always a first time for everything!
Ingredients:
6 Strawberries
a handful of Spinach
100 g of Feta
2 Tbsp of sprouts
A couple of Walnuts
A couple of cherry tomatoes
1/4 of a cucumber
For the Dressing:
500ml of greek Yoghurt (low fat)
1 garlic clove
A handful of parsil
A handful of basil
2 tsp of olive oil
1 tsp of lemon juice
Salt
Pepper
Very small cutted cucumber
Directions:
Pour boiling water of raw couscous and let swell for 10 minutes. When it’s done, refine it with a bit of olive oil and butter. let it cool down for about 1 hour. (You can cook the couscous on the previous day!)
Wash all fresh ingredients for the salad and let it drain. Cut of the stem from the spinach. Quarter the strawberries and cucumber. Cut in half the cherry tomatoes.
When everything is ready to be put in the jar you can start putting layer by layer all ingredients.
Fill up the Jar in this Order:
Carbs
Salad
Veggies
Sprouts
Fruits
Cheese (or Fish or Meat)
Nuts
For the dressing:
just cut the cucumber in very small pieces, mix all ingredients together, press the garlic in and season to taste.
Enjoy your fresh shaking salad in your Jar. Ideal for Meal Prepping for your upcoming week to take to work or for a picnic with friends and family!!!
