Oriental Halloumi-chickpea Salad
Here is a delicious vegeterian recipe for a high protein, aromatic summer salad, ideal for meal prepping or as a main course. The different ingredients give the salad an interesting mixture of consistency and taste.
From the crispy chickpeas to the juicy zoodles (Zucchini Noodles) and the firm Halloumi a great salad for mild summer evenings. The shrub gives the dressing a fruity sour note and rounds off the salad perfectly. Try it out yourself!

For 2 Servings (Meal-size)
Ingredients:
250 g Halloumi cheese
220 g chick peas
8-10 Cherry tomatoes
1 head of lettuce
1/2 courgette
8 dates
1 big apple
For the dressing:
7 tablespoons of Freimeister Kollektiv Apple Quince Shrub
4 tablespoons of olive oil
2 teaspoons mustard
2 teaspoons remoulade
Salt
Pepper
How to:
Put the chick peas in a bowl and season with olive oil, harissa and paprika (hot & sweet) spice, salt and pepper and put them in the oven for 25 min on medium heat.
Cut the halloumi into strips and fry them in the pan with some oil for about 3-4 min on each side until golden brown.
Process the zucchini in zoodles (zucchini spirals) with a vegetable spiral and then fry them in some olive oil for 2-3 min in the pan and add a little salt. Wash and quarter the apples, dates and cherry tomatoes if necessary.
Cut the Roma salad from the stalk into mouth friendly pieces and wash in a salad spinner. For the dressing, mix all the ingredients well together. Now everything can be arranged and served with the delicious Apple Quince Shrub Dressing. Bon appetite!
