Tapas

After an unexpected and frightful spring start, the situation here in Germany is slowly loosening. The restaurants and bars have opened again and you are now allowed to meet with the given hygiene rules. One is happy to eat together with family and friends. 

Like enjoying Tapas together over a glass of wine at the table and share stories with each other. 

This is how you get the sun of Spain on your plates:

Ingredients:

  • Dried abricot 

  • Dates

  • Bacon stripes 

  • Olives 

  • Grapes

  • 5 big Patatas Bravas (Potatos)

  • Polenta Grissini (Sticks)

  • 1-2 Zucchini

  • 1 can of Anchovies 

  • Green onion

  • Olive oil

  • Mojo verde / rosso (Dips) 

  • Pimientos (green mini pepper)

  • Manchego 

  • Baguette

  • Wine accompaniment: Spanish Tempranillo of your choice

 

Directions:

  1. Fry the bacon stripes 2 min from each side in the pan without adding oil (because they contain a lot of fat already), let them cool down a bit and then roll the dates & apricots around. 

  2. Cut the potatoes in mouth friendly pieces and fry them with a bit of sunflower oil in the pan for around 15-20 min until they are gold brown.

  3. Cut green onion in thin rings and drizzle on top the anchovies with olive oil. 

  4. To make the pimientos de padron, fry with a good portion of olive oil the pimientos in the pan for approx. 2 min from each side and drizzle with fleur de sel when ready.

  5. Fry the zucchini in the pan with olive oil season by taste and add garlic if you want. 

  6. Cut the Manchego cheese and place on a plate. 

  7. Finally arrange a nice table by putting all little Tapas in small plates and bowls ready to be shared. 

  8. Serve with the rest food as grapes, olives etc. and enjoy with a glass of wine of your choice.
