Gnocchi Lemon Asparagus with Burrata

Guess what? asparagus season is in full swing and I have a lovely recipe for you folks.

A delicious Gnocchi Lemon Asparagus Pan with Burrata. Nothing else then a gentle and fresh recipe that is easy to make, quick and simply so good.

The lemon zest and pesto gives the dish a little twist, the burrata cheese gives this extra creaminess and the pine nuts are completing the dish with a crunch that you were longing for.

A real spring/summer recipe to dive in!


Ingredients:

  • 200 g gnocchi

  • 250 g green asparagus

  • 125 g burrata

  • Some lemon zest

  • Some lemon olive oil

  • Pepper

  • Salt

  • 1 tbsp pesto

  • 2 tablespoons pine nuts

Preparation:

  1. Sauté the green asparagus in a little butter, and garlic for about 5-8 min. then add lemon zest.

  2. Then fry the gnocchi in the same pan in butter until crispy and mix with some pesto.

  3. Spread the burrata on a plate and serve the asparagus and gnocchi on top.

  4. Top with a little Parmesan cheese, pine nuts and lemon olive oil.
