I’m not one to jump on every Instagram food trend (thank goodness!), but when I saw the viral potato sandwich, I couldn’t resist. Why? One word: potatoes. They’re my ultimate comfort food, and this trend felt like it was calling my name.

Ingredients

  • 4 medium potatoes

  • 75 g grated Gouda cheese

  • 100 g Feta

  • A handful of tomatoes (chopped)

  • A handful of cucumbers (sliced)

  • A handful of iceberg lettuce (shredded)

  • ½ jalapeño (optional, for heat)

  • 1/2 lime

    For the Tzatziki Dip:

  • 3 tbsp Greek yogurt

  • 2 tsp crème fraîche (or sour cream)

  • A handful of cucumber (grated)

  • A few mint leaves, chopped

  • Salt & pepper

How to Make It

  1. Prep the Potatoes
    peel the potato and slice them into thin little slices, layer them on top of eachother on a baking tray to create your potato “bricks.”

  2. Crisp and Cheese It Up
    Top them each with grated Gouda and roast the potato rounds in the oven at 200°C (400°F), Let them get crispy and golden—it’s worth the wait.

  3. Add the Toppings
    Pile on fresh tomatoes, cucumbers, lettuce, tzaziki, feta crumbs and a sprinkle of jalapeño slices for some zing and a little splash of lime for the freshness.

  4. Serve and Enjoy
    Fold them up like tacos and dig in! The crispy shell contrasts beautifully with the fresh, juicy toppings.
