Thai-Vegan-Curry

Fresh & Spicy 🌶

As a big Fan of Curry I love to surprise my family or friends with cooking some good and (often spicy) curry meals. This colourful and fresh vegan dish is not only healthy but also an explosion of flavours!
It contains A lot of nutritive veggie’s, is very high in minerals and vitamins and low in carbs. Plus it has a very crisp note due to the lime and lemon grass.
This dish was supposed to become an "only-green-veggies-curry-dish" but I found it too boring, so I added a couple of other veggie's to make it a little more colourful!

For 6 person

preparation time: approx: 30 min 

Cooking time: approx: 25 min 


Ingredients: 

  • 5 Mushrooms

  • 1 big carrot

  • around 10 snow peas

  • 1 broccoli

  • 2 Baby Bok-Choys

  • 1 onion

  • 1 lime (preferably organic)

  • 1 lemon grass

  • 2 garlic cloves

  • 1 tsp of curry powder

  • 1 tsp of turmeric powder

  • 2 tsp of green curry paste

  • coconut milk

  • 1 chilli pepper

  • Salt / pepper

  • Soba Noodles

Directions: 

  1. Start by cutting your veggies and onion. cut the Onion and Chilli Pepper in small pieces. cut The mushrooms in squares and the carrots in rings. The Snow peas can be cute diagonally in half. Chop rough pieces of the Bok Choy and lemon grass the last one, to add to your pan (only) for the taste! Chop as well the coriander in small and the broccoli in big pieces.

  2. Then wash the lime with warm water and rasp off the skin. Then squeeze the lime to get 2 tsp of juice and add the juice and the lime zest to your dish with coriander leafs & stems. (keep some of the leafs for the decoration at the end!).

  3. Heat up a pan and put vegetable oil in it, when it’s hot put the onion and let them become golden. Salt and pepper them after your taste.

  4. Parallel put water to boil for the broccoli. When boiling blanch the broccoli for max. 2 min.Then pour it in a sieve and rince with cold water.

  5. Add your veggies to the pan and let them cook, then simmer in some water!

  6. Meanwhile prepare your water for the soba noodles. When boiling, add the noodles and let them cook for about 5 min.

  7. Now, add the curry, the green curry paste (i added 2 tbsp and it was already quite spicy!) 🌶 and turmeric powder to your dish and add some coconut milk for the sauce. Let simmer for at least 5-10min on low heat.

  8. Serve the curry meal and garnish it with coriander and crushed peanuts.

If you’re not a big Fan of Soba Noodles you can always cook rice instead.
