Fideuà de Valencia - Paella with Pasta
Fideuà is essentially paella made with pasta instead of rice. Like paella, the Fideuà should be cooked in a big paella pan so if you’re cooking for large numbers it’s almost impossible to cook paella in an average kitchen because of the size of the pan.
It brings together squid, prawns, tomatoes and sweet but spicy pimentón. You can serve it with a dollop of garlic alioli. The best way to cook paella is outside on an open fire.
Fideua used to be a dish for poor people. Prepared less fancy, Fideua was often cooked with fish or mussels instead of seafood and prawns.
Originally created on a ship, fishermen used to cook Paella but didn't have rice, so added noodles instead.
For: 4 people
preparation & cooking time: 45-60 min.
Ingredients:
12 Prawns
1 big Squid
1/2 kg fish bones, crabs, small fishes (we call it Moralla) This is for the fish broth
3 Tomatoes
1 Onions
1 Garlic
Fideos (small noodles, look like small spaghetti)
Paprika
Pinch of Safran
Salt
Pepper
150ml Virgin olive oil
Directions:
Put the olive oil (all of them) in the pan, stir fry the prawns and let aside.
After that add the squid and stir fry,
add the onion and garlic, salt and pepper it while you stir fry it, when they are soft and cooked, add the grated tomato, fry and finally put the noodles to the pan until they become cooked and toasted, add the spices (safran and paprika) to the dish.
Pour the fish broth on the noodles (it´s very important that it´s very warm, may be keep it boiling during the cooking)
Now wait until the Fideos (noodles) absorb the broth ( this might take 3-5 min)
It depends on the size of the noodles, but the proportion normally is 1 measure noodles/ 1,5 measure broth. (with rice it´s 1 measure rice/ 2 measure water)
Add the prawns facing each other on Top of the Fideua on the borders of the pan.
